But with all the news going around about how all that processed food is bad for your health, you want to give your guests some healthy alternatives. But somehow, fruits and salads still don’t generally appeal as finger foods of choice.

Fortunately, making a watermelon cake is the perfect way to have something healthy yet be pretty enough to look at that you’d want to post it on Instagram as well. It will certainly fit in as a stunning centerpiece for your next cookout, potluck, or shower.

But first, these are what you’ll need:

  • 2 medium-size watermelons (about 16 lb. each)
  • 1 cup fresh Rainier cherries
  • 1 cup peeled and sliced kiwi
  • 1 cup fresh raspberries
  • 1 cup fresh strawberries
  • 1 cup fresh blueberries
  • 1 cup sliced yellow peaches (from 2 peaches)
  • Fresh mint leaves

Cut off the end pieces of the watermelons. Securely place 1 watermelon at a time on a cutting board; slice the top of the watermelon to the bottom between the flesh and rind. Continue all the way around until the rind has been removed then discard the rinds.

Slice the watermelon flesh into 3 rectangular blocks: 7- x 5 1/2- x 3-inches, 5- x 3 1/2- x 3-inches, and 3- x 2 1/2- x 3-inches. For smaller watermelons, you can reduce the size of the rectangles but make sure that they’re all scaled down evenly. Make sure all blocks are cut to an even thickness.

Step 3

Put the largest block on a cake plate then insert 2 (6-inch) skewers into the center (to secure the tiers); continue with the next biggest block. The smallest block goes on top to create a tiered cake appearance. You can decorate it with various pieces of fruit and mint scattered on all layers of the cake. You can use wooden picks to help affix the fruit.
