Double Michelin-Starred Chef Refused To Do Certain Dietaries


Sat Bains, 48, who owns the two-Michelin-star Restaurant Sat Bains in Nottingham, said that he will not serve vegan food at his restaurant because it is the biggest rip off’ with ‘cheap’ ingredients and does not provide value for money.

The chef who has two Michelin stars offers a £120($260-a-head taster menu featuring delights such as Wollaton Hall deer and partridge ragout paired with truffle and lichen.

He is not a ‘specialist’ in vegan food and would ‘never set out’ to be. Restaurant Sat Bains, which has been open for 20 years and it is popular among locals and tourists.

Bains told Nottinghamshire Live: “We are not specialists in vegan food and I never set out to be a vegan restaurant.

“The customers coming here know what to expect. We’re niche – we can be niche with our menu in terms of ingredients so there are certain dietaries we can’t do and won’t do. I can’t go to a vegan restaurant and ask for steak.”

Bains said he would struggle to justify charging £120-a-head for a vegan menu.

He told the Mirror: “The amount of research to get the same flavor and texture as fat to give that luxurious mouthful is phenomenal.”

“You can’t go to a heavy metal concert and expect classical music. It’s my business and my business model to do what I want. I don’t do vegan, halal, or kosher.”

“Vegan food is the biggest rip-off. The ingredients are so cheap. I want to give people value for money.”

He said foods such as potatoes, tomatoes and peppers, were ‘so hard to get right.’

‘It’s not just ten dishes thrown on a menu – it’s thought about so much in minute detail. We want to give our customers the best food we can.
